Broccoli Soup

I found this recipe a few years ago and even though it's kind of lengthy in steps it really is good!

Broccoli Cheddar Soup

1 tbsp butter, melted
1/2 medium onion, chopped
1/4 cup butter, melted
1/4 cup flour
2 cups half and half
2 cups chicken stock
1/2 pound broccoli
1 cup carrots, julienned
salt and pepper to taste
1/4 tsp nutmeg
8 ounces grated sharp cheddar cheese

1. Saute onion in butter and set aside.
2. Cook melted butter and flour stirring constantly with a wire whisk over medium heat for 3-5 minutes. Add Half and half, then chicken stock and simmer for about 20 minutes.
3. add broccoli and carrots and onions. Cook until tender over low heat, about 20-25 minutes.
4. pour into a blender, food processor, magic bullet, whatever and puree. Take it back to the stove and add the cheese and nutmeg then serve!

It's really good! If you don't like nutmeg just leave it out, the soup is great without it :)
